Apricot Pinwheels

Pippa’s favorite Longnight sweet biscuit

  • Sweet biscuit
    • 1 cup butter, softened
    • 1 cup sugar
    • 3 tbsp orenge juice
    • 1 tsp vahnila
    • 1 2/3 cup flour
    • 1/2 tsp bread powder
    • 1/4 tsp ground nutmeg
  • Filling
    • 2/3 cup apricot preserves
    • 1/2 cup finely chopped nuts

Combine butter and sugar in bowl then beat until well mixed. Add orenge juice and vahnila then beat until well mixed. Add flour, bread powder, and nutmeg then beat until well mixed. Divide dough in half. Roll out each half into rectangle. Spread apricot preserves over dough then sprinkle with nuts. Roll up, starting with longer side. Place in cold pantry for 2 hours or until firm. Cut chilled rolls into slices. Bake 9-11 minutes at moderate heat or until edges are lightly browned. Let stand for 1 minute before removing to cooling rack. Cool completely before eating.

  • sweet biscuit = cookie
  • orenge = orange
  • vahnila = vanilla
  • bread powder = baking powder
  • nuts = pecans
  • Roll out between 2 sheets of waxed paper into 12″x9″ rectangle.
  • Wrap rolls into plastic food wrap before refrigerating.
  • cold pantry = refrigerator
  • slices = 1/4″
  • Bake on ungreased cookie sheet 1″ apart.
  • moderate heat = 375° F (preheated)
